Know where your meat comes from.

Porter Road works directly with small US farms rather than simply buying meat from the commodity market. Those relationships give Porter Road greater visibility into how the animals are raised and allow us to work with farmers who meet our standards.

Your purchase supports small US farms that are competing with the factory meat industry. When you buy Porter Road, there's a connection between the people raising the animals, the people butchering the meat and the person putting it on the table.

How Your Meat Is Raised Is A Matter Of Trust

We know each and every farmer that we work with. They work closely to raise their animals based on our specifications, and rely on us to make a living just as much—if not more—than we rely on them.

We’ve worked with our primary farmer, Joey Rittenberry, for many years now. His farm is close to our processing facility, so we don't have to travel far to see how Joey and his animals are doing, and they don't have to spend much time on the road to get there.

Buzzwords like 'cage-free' and 'organic' just don’t cut it for us. We vet our partners against the highest possible standards and regularly visit their farms to make sure the animals are raised outside, fed vegetarian feed, and given proper attention at every stage.

Porter Road animals spend their lives on pasture rather than being confined to feedlots. They have room to move, forage for food and express their natural behaviors, and they're never given added hormones or antibiotics.

Porter Road cattle remain on pasture throughout their lives. They graze naturally and can receive supplemental feed without being moved into a feedlot for finishing.

We can't always be there to watch cows and sows nurse their young and graze the fields. That's why every farmer and everyone involved in every operation must sign an affidavit agreeing that their animals and practices meet the criteria of our humane livestock program. It requires the following:

  • No animal by-products ever fed
  • No waste by-products fed
  • Must be raised on pasture/woods
  • No crates/cages/or tethers are permitted EVER

Hand-cut at our own facility

Our devotion to the animal continues at our facility in Kentucky, where we meticulously hand-cut every piece of meat, making sure nothing good goes to waste. There’s so much more to love than T-Bones and Ribeyes, and we want you to experience it all.

Porter Road operates its own processing and butchery facility in Kentucky. Our meat is hand-cut by skilled butchers who understand that no two animals, and no two pieces of meat, are exactly alike.

We lose water on purpose.

Beef can be aged in very different ways. Wet aging happens inside vacuum-sealed plastic. Porter Road dry-ages beef in a controlled environment where moisture naturally leaves the meat while enzymes tenderize it.

The result is beef with concentrated flavor and tenderness.

  • 90% of retail beef is wet-aged. Ours is dry-aged to maximize flavor and tenderness.

  • Within 24 hours, 4% of the water weight evaporates.

  • Moisture continues to evaporate, albeit at a slower rate (1-2% per week), for the entirety of the dry aging process.

  • That enzyme works for up to 8 days.

Cut by Hand

At Porter Road's own facility in Kentucky, skilled butchers cut the meat by hand. They're working with the individual piece of meat in front of them, following its natural seams, trimming it properly and deciding how best to turn it into a great cut.

Better butchery means better cuts. The goal isn't simply to process as many identical pieces of meat as quickly as possible. It's to get the most out of the animal and put a properly butchered piece of meat on your cutting board.

Do You Know What Grass-Fed Actually Means?

Take ‘grass-fed.’

It sounds like a guarantee. It used to be one — until 2016, when the USDA withdrew its own definition. Today, every producer writes their own rule for what ‘grass-fed’ means on their package. No two are required to match.

Meat that’s simply labeled ‘grass-fed’ doesn’t answer questions about added hormones or antibiotics. That’s not a lie. It’s just one answer to one question — and there are a lot more worth asking.

Most meat labels answer one question. We answer all of them.

Easy to customize, and easier to consume.

We used our pasture-raised pork to create a simple taco recipe that is full of flavor, and easy to adjust to your tastes. While this dish does cook low and slow for many hours like a classic carnitas recipe, your part of the cooking won't take more than 30 minutes. Sit back and enjoy the delicious scent of slow cooking pork.

Ingredients

  • Black pepper
  • Coarse Salt
  • 1 14.5 oz can diced tomatoes
  • 5 Cloves Garlic, Crushed
  • 1 Whole White Onion, diced
  • 1 Cup Peppers of your choice, chopped.
  • 3 Bay leaves
  • 1 Tbsp Dried Oregano
  • 1 tsp Cumin
  • 1/4 Cup Red Wine
  • 2 Cup Pork Stock
  • Tortillas
  • Fresh Cilantro, chopped
  • Hot Sauce
  • White Onion, diced

Preparation

  1. Preheat oven to 325 degrees. Pat pork butt dry and season liberally with salt and pepper.
  2. Heat dutch oven over high heat. Sear the pork on all sides until dark brown, starting fat side down.
  3. Remove the shoulder and add garlic, onion and peppers. Cook until tender, 2-3 minutes.
  4. Carefully place the shoulder back in the dutch oven (or crock pot) along with the remaining ingredients.
  5. Cover, place in the oven and cook until fork tender, about 3 hours.
  6. Remove from the oven then pull the meat apart, mixing in the cooking liquid. Serve on tortillas and top with raw onion and fresh cilantro. Serve lime and hot sauce on the side.

Our Story

It Began in 2010.

  1. 2010

    Co-founders James Peisker and Chris Carter met in one of downtown Nashville’s favorite kitchens. They immediately hit it off, and decided to jump ship to start their own catering business. As the business grew, Chris and James realized how hard it was to get their hands on quality, local meat from sources they could trust.

  2. The shop

    They made constant trips to the farmer’s market, but even there, the meat wasn’t cut properly, and was often sold frozen. Yet again, they decided to take matters into their own hands, and started their own butcher shop.

  3. 2017

    Today, Porter Road works with select farms, and expertly hand-cuts every piece at their Kentucky facility. While the butcher shop became a cult favorite for people who lived nearby, Chris and James realized that friends and family outside of Nashville were still stuck eating low quality, grocery store meat. In 2017, they decided to take Porter Road online with the goal of making the world’s best meat accessible nationwide.

Everything You Want to Know About Our Build-Your-Own Subscription Box

Here's everything you need to know:

Why do I have to order a minimum of 5 items?

We built the minimum around making sure every box is worth shipping, for you and for us. Shipping a single pack of ground beef across the country isn't good for anyone, and it doesn't reflect the kind of thoughtful operation we're trying to run. Five items gives you a real, stocked delivery and keeps our shipping responsible. We're not trying to nickel and dime you on box size, we just want every delivery to feel worth opening.

Why can't I order more than 10 packs of ground beef? Or why do I have to include a steak?

This one comes down to something we're genuinely proud of: we are a whole animal butchery.

That means when beef cattle come through our facility, we use everything. Every primal, every cut, every grind. We don't buy an animal just to make ground beef. We don't buy one just to sell ribeyes. The animal provides everything, and our job is to move it all thoughtfully and without waste.

When you build your box, we have caps on certain items and encourage variety across cut types because of this. If every customer loaded up on ground beef, we'd have locker rooms full of steaks with nowhere to go. If everyone only wanted ribeyes, we'd be sitting on mountains of trim. The balance matters, and the caps are how we protect it.

We know that might feel like a limitation at first. But it's also what allows us to source from small family farms, work with animals raised the right way, and keep the quality where it needs to be. The whole animal philosophy isn't a marketing line. It's how we buy, how we butcher, and how we ship.

Can I swap my cuts between orders?

Yes. That's kind of the whole point. You can update your box before your next delivery processes, so if you want to swap the hot Italian sausage for smash burger blend because you're doing burgers on the grill this month instead of pasta night, you can do that. We'll remind you before your order locks so you have time to make changes.

How does skipping or pausing work?

Life happens. Travel, packed schedules, a freezer that's already full. You can skip a delivery without cancelling, and your next order will pick up right where you left off. We want you to have meat on hand when you need it, not a box showing up when you don't.

How is pricing handled? Is it different from buying a la carte?

Subscription pricing is set per item when you build your box. You'll see your total before you confirm, and you'll be billed on your delivery schedule. We're not hiding anything in the fine print. What you build is what you pay for.

What if something isn't working for me?

Tell us. We mean that. This program is still early and we are genuinely learning as we go. If there's a cut you wish you could add, a cap that doesn't make sense for your household, a piece of friction in the experience that's getting in your way, we want to hear it. Our goal is to make this the best subscription meat service in the country. We're not going to get there by guessing. We're going to get there because customers like you tell us what's broken and we fix it.

At the counter

How can I tell if my meat arrived in good condition?

The meat should be cool to the touch when it arrives. Unless otherwise noted, the product was never frozen, so therefore it could not have defrosted. It is okay if the gel packs are not frozen, as long as they are still cold. If you’re still not sure, rely on your nose. Meat that is spoiled will smell sour and be very sticky to the touch. If the box is damaged or opened in anyway please contact us immediately.

The meat had a strange smell when it came out of the vacuum sealed bag, why?

Ah yes, we call this “bag funk.” The meat in the package has been deprived of oxygen since it was sealed, so as you open the bag the gas will be released. Give it a few minutes to air out on the counter and take another whiff. It should smell different from your average meat (that’s a good thing!). It should never smell sour or feel slimy - if it does, let us know. It’s a sign that something’s wrong.

How long can meat last in the refrigerator?

On average you should consume or freeze your (vacuum sealed) product within 7 days of its arrival.

- Poultry needs to be consumed or frozen as soon as possible or within four days.

- Pork should be consumed or frozen within 5 days of delivery.

- Beef is unique. Beef that is the whole muscle (not ground) should be eaten or frozen within 10 days of delivery. That being said, beef can last longer. As long as the meat doesn’t smell sour or feel slimy you are good to go. James thinks with beef the funkier the better.

Is your meat certified organic?

Because we work with such small farms, they don’t have the official certification. Instead, we have developed incredibly strict farming guidelines with all of our partners, which almost always beat out the minimum organic standards.

How do you handle returns?

Given the perishable nature of the product, we do not accept returns. If there is a problem with your order, contact customer service and we will work to make it right.

Do you offer a military discount?
